At Vande Rose, we do things a little differently. We cure our hams in a brine of salt, brown sugar and curing salts without phosphates-the time honored way our grandparents did. This takes as much as a week instead of just a day. The ham is then drained and smoked slowly over real applewood (no liquid smoke here) until it is fully cooked. The result is a ham that actually loses weight as it cooks. We call it HAM because that’s all there is. You’re buying juicy, flavorful meat, not water and phosphates.
 
Truly great ham begins with truly great pork that is why we use Duroc pork. Duroc hogs produce large and highly marbled legs with a tight-grained texture, elevating the juiciness of this cut while boosting its flavor. This texture also enhances the ham’s ability to absorb the cure and smoke at a level higher than other breeds.
 
Our Duroc pork is raised naturally, without growth promotants or antibiotic feed, in a clean atmosphere on our family farms.
